The best tomato soup you have ever tasted! Easy Tomato Basil Soup will redeem cold days. It’s that good.

I hate tomatoes.
Really. There is nothing worse than biting into a sandwich and finding a hidden tomato.
Sure, I like salsa, ketchup, spaghetti sauce, but anything that is super tomato-y, it’s not for me.
My husband, on the other hand, likes them.
It’s gross, I know!
One of his favorite soups is tomato soup. I just can’t bring myself to eat plain tomato soup, but tomato basil isn’t that bad.

It was pretty chilly last week in North Carolina and I wanted something that would warm me up. I also kind of wanted to try out my new Blendtec blender too. Guys. It seriously has a soup button. A soup button! I didn’t even know those existed!!
This Tomato Basil Soup is SO easy. I love when I can have a great meal with little prep.

Easy Tomato Basil Soup
- 2 26.46 oz boxes of Pomi tomatoes {that’s what we used anyway}
- 20 fresh basil leaves
- 1 half pint heavy cream
- 1 stick of salted butter
- salt and pepper to taste
Easy Tomato Basil Soup Directions
Are you ready for how easy this is?
Add tomatoes and basil to the blender and blend. I tore the basil into smaller pieces. Before I had a Blendtec, I had to blend the soup in small batches. You want the basil to be incorporated into the soup, not chunks of basil in every bite. It is completely worth the effort.
If you like cold soup, you could melt the butter, add it to the tomato and basil mixture, pour in the cream, season with salt and pepper, and be done.
I like my soup hot, so I poured the tomato and basil mixture into the pot on the stove where I had already added the butter. I stirred it a bit, added the cream, Real Salt, a couple of turns of the pepper, and let it simmer.

Perfection.
Because my husband is also a big bread person, he requested a nice crunchy on the outside and soft on the inside loaf of bread.
Grilled cheese and salad are perfect compliments to this soup.

Honestly, I never use a set time. I bring it to a boil and let it simmer until it's time to eat, unless it looks like it has boiled down too much.
