I’ve adapted this vegetable beef soup version from a recipe that a dear friend gave me. She brought us this soup after our son was born and I could have eaten the whole container by myself. Seriously. It’s that good.

Easy Vegetable Beef Soup

1 lb ground beef chuck
1 container of beef broth
2 cans of diced tomatoes (or strained)
1 can kernel corn, drained
1 can of green beans, drained
1 pinch sage
4 carrots, diced
4 medium potatoes, halved and quartered (or whatever size you prefer)
1/2 onion, diced
1 stalk celery, diced
Saute onion, celery, and carrots in a tablespoon of butter. Cook until onions are translucent.
Cook ground beef until brown.
Add the rest of the veggies
Pour in beef broth
Add salt & pepper to taste
Add a pinch of sage
Cook slow vegetable beef soup for a couple of hours. This is perfect for crockpot vegetable beef soup.
I usually have to add water and salt and pepper as it cooks since the potatoes soak up a lot of the liquid.
