Gluten Free Vanilla Cupcakes

  • ¼ teaspoon salt
  • 1 ¾ teaspoons baking powder
  • ½ cup dairy-free milk (we used coconut cashew)
  • 2 teaspoons vanilla extract (or vanilla bean paste)

For the frosting

  • ½ cup dairy-free butter (we used Earth Balance), room temperature
  • 1 teaspoon vanilla extract
  • 3 cups powdered sugar
  • 2 tablespoons dairy-free milk (we used coconut cashew)
  • Food coloring of your choice and sprinkles (optional)

How To Make Gluten Free Vanilla Cupcakes

Preheat oven to 350°F (180°C). Position the oven rack in the center of the oven.
Line a cupcake pan with liners.

Make the Batter

  1. In a bowl, combine oil and sugar.
  2. Add eggs and beat with an electric mixer at medium speed for one minute.
  3. Add flour, salt, baking powder, dairy-free milk, and vanilla extract (or paste)

  2. Gradually add powdered sugar, one cup at a time, beating well.
  3. Alternate one cup of powdered sugar and 1 tablespoon of dairy-free milk until all ingredients are blended.
  4. Adjust thickness if needed by beating in additional dairy-free milk if needed to obtain the desired consistency.
  5. Color and decorate.
