The first year we went gluten-free, everything was going smoothly until the holidays. I quickly realized that all of my favorite holiday treats were loaded with gluten. Then I felt deprived. I was missing out. So, I cheated. I thought I was being sneaky and took a cookie like I was three, not an adult, and while it tasted just as good as I remembered, my body hated me afterward. It wasn’t worth the initial bliss.

One of the things I’ve missed most about eliminating gluten is indulging in Christmas cookies during the holidays. That and bread. I miss homemade bread that is crunchy on the outside and chewy and soft on the inside.
