We’ve all been there.

We want to make delicious, healthy food for our families, but time gets in the way. Either we buy the food and it sits in the refridgerator going bad because the days get away from us, or we buy everything and forget what we bought.

Meal planning will save your sanity. It does take time to sit down and write out all of the meals, but it’s completely worth it. Every month after the initial planning session will go so much faster.

One of the best ways to save money while grocery shopping is to buy a whole chicken and use that for several meals during the week. You can even save the bones for homemade chicken broth. The Instant Pot makes this SO EASY.

2 Tablespoons butter
1 Tablespoon olive oil
2 teaspoons Italian seasoning
Salt and pepper, to taste
1/2 cup white wine
1/2 cup water or broth
2 carrots, chopped

Place the chopped vegetables and water in the bottom of the instant pot and place the chicken over top.
Pour the wine over the chicken and secure the lid.
Select the manual setting, set to high, and increase time to 25 minutes.
Natural release for 10 minutes to let the chicken rest and then quick release until steam is complete.
Set the oven to broil and place the chicken under the broiler for 2 minutes to crisp up the skin.
