One of the best ways to save money while grocery shopping is to buy a whole chicken and use that for several meals during the week. You can even save the bones for homemade chicken broth. The Instant Pot makes this SO EASY.

Cook a Whole Chicken in Your Instant Pot
1 whole chicken
2 Tablespoons butter
1 Tablespoon olive oil
2 teaspoons Italian seasoning
Salt and pepper, to taste
1/2 cup white wine
1/2 cup water or broth
2 carrots, chopped
1 onion, chopped
10 cloves garlic, or to taste
3-4 potatoes, chopped
1 bay leaf
Using a spoon, gently pull the chicken skin away from the chicken to create a gap.
Press the butter underneath the skin, distributing it as evenly as possible.
Rub the outside of the chicken with olive oil, and then season with Italian seasoning, salt and pepper, to taste.
Place the chopped vegetables and water in the bottom of the instant pot and place the chicken over top.
Pour the wine over the chicken and secure the lid.
Select the manual setting, set to high, and increase time to 25 minutes.
Natural release for 10 minutes to let the chicken rest and then quick release until steam is complete.
Set the oven to broil and place the chicken under the broiler for 2 minutes to crisp up the skin.
